Sheet Options Not Saved When Exiting Excel 2016 Document

We have an Excel file that has been giving us some problems over the last week so.   Over the past week when opening the document the Headings & Gridline options in the Sheet Options have changed so the document doesn't display correctly. 

Its a few button clicks to fix them so we do and everything is fine again but after saving and exiting the same problem occurs.  There is approximately 10 tabs or so in this file so each one needs to be fixed after opening again.

This problem is affecting all PCs in the office now (half a dozen in total).  I haven't been able to pinpoint any specific update that was installed.  So, not sure if something did or not.  All PCs are runnings Office 2016 Click-to-run not but not office 365.  They all show as up to date - Excel 1806 Build 10228.20080.
